Watching expert riders navigate their horses over the cross country course at Red Hills Horse Trials as spectators is hard work, and as early afternoon approached, we decided to venture into the food court area at the event for a quick meal. Kirsten’s sweet tooth pulled her towards the kettle corn stand, while with my love of all things savory, I gravitated towards the Backpackers Box food truck.
The Backpackers Box is the brainchild of international travelers Kira and Attilla who have worked and lived in far flung locales including Spain, Thailand, Ireland, Hungary and the United Kingdom. Along the way, the local cuisine made a lasting impact that can be sampled in person at their new food truck.
On the day we visited, the menu was full of international flair. Fish and chips from the UK, Caribbean rice and lentils (vegan), Thai honey chicken, and Japanese style fried cheese cake were all available. However, as pork has a special place in my heart, I ordered the Austrian Wiener Schnitzel sandwich.
We found a space at a nearby picnic table, and watched Backpackers Box mascot Buttercup, the couple’s rescue dog from Thailand, lazily nap on the ground near the back of the truck.
